I’d recommend instead of a “redesign” (in different work to fill your case studies) to instead think about features a product or website is lacking in. It gives a younger designer a starting point in terms of using an exiting design system and tone of content. If it’s a pain point they experience themselves, it’ll probably ground them more in terms of solving a problem and writing a proper case study.
I’m not a personal fan of redesigns because people often throw restrictions out the door and don’t consider all the various users the company actually has to consider.
